Paleo Shrimp Skewers with Prosciutto Nectarines



These Paleo shrimp skewers with prosciutto-wrapped nectarines are bursting with flavor and perfect for a summer barbecue. The combination of savory prosciutto, sweet nectarines, and juicy shrimp creates a delicious and satisfying dish.

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 4 slices prosciutto, cut into thin strips
  • 2 ripe nectarines, pitted and cut into chunks
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Instructions:

Preheat grill to medium-high heat

In a bowl, combine olive oil, minced garlic, lemon juice, dried thyme, salt, and pepper

Thread shrimp, prosciutto strips, and nectarine chunks onto the soaked wooden skewers, alternating as desired

Brush the skewers with the olive oil mixture

Grill the skewers for 3-4 minutes per side, or until shrimp are pink and cooked through, and the prosciutto is crispy

Serve hot, garnished with fresh herbs if desired
