Smoked Chicken and Dressing
This recipe for smoked chicken and dressing combines the rich flavor of smoked chicken with the savory flavor of cornbread dressing to make a dish that is perfect for any occasion.
Ingredients:
- 1 whole chicken, about 4-5 lbs
- 1 cup cornbread crumbs
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 1/4 cup chopped parsley
- 1/4 cup melted butter
- 1 cup chicken broth
- Salt and pepper to taste
Instructions:
Preheat smoker to 250F 120C
Remove giblets from chicken and rinse under cold water; pat dry with paper towels
Season chicken inside and out with salt and pepper
In a bowl, mix together cornbread crumbs, celery, onion, parsley, melted butter, and chicken broth to make the dressing
Stuff the chicken cavity with the dressing mixture
Place the chicken on the smoker grate breast side up
Smoke the chicken for about 3-4 hours, or until the internal temperature reaches 165F 74C in the thickest part of the thigh, basting occasionally with melted butter or chicken broth
Once done, remove the chicken from the smoker and let it rest for 10-15 minutes before carving
Serve the smoked chicken with the dressing on the side
